Spanish, barbacoas: a word adopted from the Indians of Guiana, their name for the frames on which they roasted or smoke-dried any kind of meat or fish; it is also applied (in English, corrupted to “barbecue”) to a hog or other large animal roasted whole, and to the open-air entertainment at which such roasts (now usually made in a pit dug in the earth) form part of the food. ↑
