Water was cooled by being suspended in vessels over the mouths of wells; and sometimes boiled previously to render the process more complete. For, according to the Peripatetics, πᾶν ὕδωρ προθερμανθὲν ψύχεται μᾶλλον, ὥσπερ τὸ τοῖς βασιλεῦσι παρασκευαζόμενον, ὅταν ἑψηθῇ μέχρι ζέσεως, περισωρεύουσι τῷ ἀγγείῳ χιόνα πολλὴν, καὶ γίνεται ψυχρότερον.
