Note 18 — PENZANCE.
Reading edition
The custom of obtaining the cream from new milk by coagulation from heat, is peculiar to Devonshire, Cornwall, and the opposite coast of Brittany, and is supposed to be of Celtic origin. The butter obtained by beating up this cream does not differ much in flavour from that procured by churning new cream, except the process be carelessly conducted, when it will acquire a smoky taste.
